Our Taco Tuesday was covered in a previous post, but here is another easy, flavorful recipe you can incorporate into your own Taco Tuesday or any other day of the week!
Follow the instructions below to build your own bowl. I include my breakdown at the end of this post.
Shopping List:
1 large chicken breast
2 bell peppers (we use red and yellow)
1 small jalapeño
1 bag of shredded lettuce (or a head to shred yourself)
1 package of fajita or taco seasoning
1 bag of shredded Mexican blend cheese
1 box of brown rice (we get the quick rice that can be ready in 10 minutes)
1 bottle of Trader Joe's Chili Lime seasoning (or whatever you would like to season your rice with)
Prep Time: 10 minutes
Cook Time: about 15 to 20 minutes

If you have seen my Taco Tuesday post, this recipe is pretty similar but a tasty variation if you prefer chicken to beef.
Prep the peppers and jalapeño by slicing each to the desired thickness.
Butterfly the large chicken breast. You can skip this step if you bought smaller pieces. Next sprinkle enough seasoning to cover each side of the chicken thoroughly. Grill the chicken over medium heat for about 6 minutes on each side. Sometimes we just don't want to grill, so another option is to pan sear the chicken over medium heat. Brown each side then turn down the heat a bit and cook each side for about 5 minutes, covered. We always use a meat thermometer to make sure the chicken is cooked all the way through (most sources say at least 165 degrees Fahrenheit is done).
We cook everything simultaneously, so after we get the chicken started, we start the rice. Just follow the instructions on the box. The Lowe's Foods brand we buy says to bring water to a boil, add the rice, turn down to a simmer, cover, and cook for 10 minutes. When most of the water is absorbed, add a few sprinkles of the Trader Joes's Chili Lime seasoning. Once all the water has been absorbed or cooked off, add a few more sprinkles and a small pad of butter.
Now time for the veggies! We cook the slices of jalapeño and bell peppers in a sauce pan over medium heat. We try to use minimal oil on our veggies. Spray the pan and either toss the veggies in a little oil or spray them with your cooking spray of choice. We like to add the Trader Joe's Chili Lime seasoning to the veggies too in order to add a little kick.
Once everything is cooked, its obviously time to build the bowl and dig in!
My bowl comes in at just under 500 calories:
1 half of the large chicken breast (about 5 ounces)
2 cups shredded lettuce
1 cup cooked brown rice
1/4 cup (28 grams) of shredded Mexican blend cheese
1 cup of the fajita veggies
